Humble Wood Fire
If you’re skeptical of a chef’s ability to create a respectable margherita flatbread in the constricted quarters of a food truck kitchen, you must visit Humble Wood Fire. Humble Wood’s chefs create a variety of gourmet pizzas ranging from the classic Plain Jane topped with tomato sauce and mozzarella to the colorful Funghi pizza, decorated with coconut-cashew alfredo, sauteed mushrooms, sun-dried tomatoes, thyme and mozzarella. The dough and sauces are made from scratch using local and organic produce. Humble Wood can also accommodate vegetarian, vegan or gluten-free diets.

Soup To Nuts
Soup To Nuts has taken a childhood classic, grilled cheese sandwiches and soup, and added a modern twist that any foodie will love. The fun sandwiches include grilled mac and cheese, pulled pork mac and cheese and a caramel apple grilled cheese. The Soup To Nuts calendar states that it sells at High Dive, First Magnitude and Blackladder Brewing Company.

When army veteran Scott Snyder returned from service and was looking for a way to support his family, Papa Pineapples was born. With the help of his wife, his 1977 step van and the rest of the Papa Pineapples team, Synder now runs a popular Gainesville food truck. The food at Papa Pineapples could best be described as delicious Hawaiian cuisine with a modern twist. If you’re looking for an explosion of tropical flavor, get the Grilled Pineapple Pork Sliders — slow-cooked pork in Hawaiian marinade, smothered with grilled pineapple on soft Hawaiian rolls.

Deciding between Italian and Southern? Look no further; Bubba Luigi’s has successfully blended the two fabulous food types. LEJ Pretzel Co.
Golden brown, delicately sprinkled with salt and slathered in butter, LEJ’s pretzels will guarantee you don’t leave the food truck empty-handed. LEJ Pretzel Co. sells a variety of items, from thick and fluffy Bavarian-style pretzels to Horchata-glazed dessert pretzels and bite-sized pretzel bites for an on-the-road snack. While the store is only open on Fridays and Saturdays, you can still find LEJ Pretzels food truck at one of its more frequent hotspots during the week.
